This one was inspired by the Great British Bake Off. Tamal made something similar as a soda bread and I liked the sound of the flavour combination so much that I decided to try and make my own at home. I couldn't find an exact recipe for this so I looked at a couple and adapted them myself.
Ingredients:
500g wholemeal bread flour
1 sachet fast acting dried yeast
3 tbsp sunflower oil
270ml warm water
approx 75g walnuts (chopped)
approx 100g dried figs (chopped)
approx 80-90g goats cheese (chopped)
To begin with make your basic dough. Combine the flour, yeast and oil in a bowl with a pinch of salt. add the water gradually and mix to form a soft dough. When you have formed a dough, turn it out and to a floured surface and knead for ten minutes, using the heel of your hand to push the dough. Cover with a tea towel and leave somewhere warm to prove for approximately 1 hour. After one hour remove the dough from the bowl and knead for a few minutes to knock the air out of it. Then flatten it out and sprinkle the walnuts and figs over the top. Press them in slightly, then roll it up (almost like a swiss roll) fold the ends in on each other and knead a little to ensure the fruits and nuts are well distributed. Return your dough to the bowl and again cover with a tea towel and let it rest for 20 minutes. When its rested, once again knock the air out then add your cheese using the same rolling and kneading method as before. Place on a floured baking tray, cover and rest for 15-20 minutes as you preheat your oven to 200 degrees. Put a roasting tray on the bottom of your oven and when you put your bread in, empty a glass of water into the tin to create some steam to make your bread a little more crusty. Bake for 30-40 minutes until it makes a hollow sound when you knock on the bottom
