Spiced apricot and lamb stew

I've been wanting to cook Persian for ages then I found this gorgeous recipe for spiced lamb with apricots and the rest, as they say, is history.

Ingredients:
1 onion (chopped)
approx 300g diced lamb leg
1 heaped tsp ground cumin
1 tsp ground cinnamon
1 tsp turmeric
1 and half tbsp honey
approx 120g apricots

Cook onions in oil until they begin to brown slightly at the edges. Add the meat and stir to keep the meat moving so that it browns but doesn't stew. Add the spices and a pinch of salt, stir well to coat the meat evenly. Add the honey and stir. Pour in enough water to cover the ingredients, turn down to low and simmer for 1 hour and 15 minutes, stirring occasionally. After 1 hour and 15 minutes stir in the apricots and cook for another 45 minutes. Serve with rice. For an extra twist, stor some chopped dates through your rice.
